Suggestions » Tongue Stewed with Sugarcane Syrup and served with a Warm Rocket Salad


500 gr  »  Tongue (cow)

300 gr  »  Potato

150 gr  »  Cottage Cheese

100 gr  »  Fresh Bolota Mushrooms

2 tablespoons  »  Ribeiro Sêco Sugarcane Syrup

2  »  Onions

1 small wine glass  »  Dry Madeira Wine

to taste  »  Pine Nuts

to taste  »  Ginger

50 ml  »  Soy Sauce

to taste  »  Salt

to taste  »  Ground White Pepper

  • Boil the tongue in a saucepan for 30 minutes. Leave to cool, remove the skin and cut into thin slices.
  • Stew the onions with the grated ginger, sugarcane syrup, soy sauce and madeira wine. Add the tongue to this and stew for another 20 minutes, season with salt and pepper to taste.
  • Boil the potatoes, mash them and blend them. Fold in the cottage cheese or cream cheese. Season with salt and pepper.
  • Slice the mushrooms, season them and sauté them, stir in the rocket.
  • Garnish with pine nuts.
