350 gr  »  Mackerel Fillets

300 gr  »  Yellow Maize Flour

2  »  Onions

2  »  Whole Chilli Peppers

to taste  »  olive oil

2  »  Tomatoes

100 ml  »  Wine Vinegar

3 tablespoons  »  Ribeiro Sêco Sugarcane Syrup

to taste  »  Salt

30 gr  »  Garlic

100 ml  »  White Wine

to taste  »  Savoury


  • Put two litres of water to boil seasoned with savoury, garlic and olive oil. Add the maize flower and cook for one and a half hours. Shape on a tray.
  • Season the mackerel with salt and pepper and fry in olive oil at a gentle heat. Put to one side.
  • Using the same pan, add white wine, vinegar, one tablespoon of sugarcane syrup, tomato sliced into cubes and cook for 5 minutes. Season to taste. (This will be served as a sauce).
  • Cut the onion into halves, place in a saucepan with olive oil and a sprinkling of sugarcane syrup and caramelize.
  • Cut the maize into rectangles and serve it as cold as a bed for a piece of mackerel and some onion.
